This berry is rich in vitamin “P”, it contains vitamins “A”, a group of vitamins “B”, “E”, “C”, and antioxidants. Distinguished by a whole treasure trove mineral elements: fluorine, boron, in large quantities iodine, iron, manganese, molybdenum, copper, pectin and tannins. Accordingly, in traditional medicine this berry is prescribed to people to normalize blood pressure, to improve functions thyroid gland, strengthening blood vessels, as a component in the treatment of atherosclerosis. To dry chokeberry, you should take fully ripened fruits. It is advisable to pick the berries no earlier than after the first frost. Because even somewhere at the end of August, a blackened and seemingly ripened berry fully reveals its healing properties only when it gets slightly frosty. There are at least two methods by which chokeberry is dried. The first involves drying the berries for a relatively short period of time, until about spring. The second until the next harvest and longer.

In the first case, the rowan is cut with scissors, directly from the tree, with a single umbrella branch, without cutting the stalk or washing the berry. Then, they are strung on a strong thread, fishing line or wire and hung in a dry room. Store in this form all winter, using as needed. Since this berry contains tannins, in this form it does not undergo fermentation and microbes do not form in it.

The second option for drying rowan berries may be more labor-intensive, but the result lives up to expectations. The berries are sorted, removed from the stalks, washed well, laid out on a sieve in a layer of 2-3 cm, allowed to drain and then dried in the sun for fresh air or in a dryer at a temperature of 60-70 degrees, according to the instructions of the selected dryer. There are a number of nuances. To avoid the berry losing its beneficial properties and becoming only superficially similar to useful product, drying must begin in several stages. First, chokeberry is kept at a temperature of 40 - 45 degrees for about 20-30 minutes, then added to 60, no more. You need to dry it until the berry, when squeezed in your fist, stops producing juice. At the same time, the fruits should not change their color from black to brown-brown or reddish. The berry, which has acquired a brown color, almost completely loses the most important microelements and, most importantly, the valuable vitamin P.

After drying, the berries can be stored in an airtight container. The best option is any plastic, but not plastic container. In plastic, by type plastic bottles or cans, all bulk and dry products are stored much better, moisture does not form in it.

The big advantage of drying black rowan is that the berry loses its astringency, acquiring a pleasant sweetish taste with a slightly sour taste, remaining not just healthy, but a medicinal berry.
